Ingredients (Serves 4):
For the Chicken Marinade:
• 4 boneless, skinless chicken thighs or breasts
• 1/4 cup olive oil
• 2 tbsp soy sauce
• 2 tbsp honey
• 2 tbsp Dijon mustard
• 1 tbsp balsamic vinegar
• 2 cloves garlic, minced
• 1 tsp smoked paprika
• 1/2 tsp dried thyme
• Salt and black pepper to taste
For the Sauce:
• 1/2 cup chicken broth
• 1/4 cup white wine or additional chicken broth
• 2 tbsp Dijon mustard
• 1 tbsp honey
• 1 tbsp cornstarch mixed with 1 tbsp water (for thickening)
• 1 tbsp fresh parsley, chopped (for garnish)
Instructions:
Step 1: Marinate the Chicken
1. In a bowl, whisk together olive oil, soy sauce, honey, Dijon mustard, balsamic vinegar, minced garlic, smoked paprika, dried thyme, salt, and black pepper.
2. Place the chicken thighs or breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it's well-coated.
3. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for best results.
Step 2: Cook the Chicken
1. Preheat your grill or a large skillet over medium-high heat.
2. Remove the chicken from the marinade, allowing any excess to drip off.
3. Grill or sear the chicken for 6-7 minutes per side (depending on thickness), or until the chicken reaches an internal temperature of 165°F (75°C) and has a nice golden-brown crust.
4. Remove the chicken from the grill or skillet and let it rest for 5 minutes before slicing.
Step 3: Make the Sauce
1. In a small saucepan, combine chicken broth, white wine (or additional chicken broth), Dijon mustard, and honey. Bring to a simmer over medium heat.
2. Stir in the cornstarch mixture and cook for another 2-3 minutes, or until the sauce has thickened. Adjust seasoning with salt and pepper if needed.
Step 4: Serve
1. Slice the rested chicken and arrange it on a serving plate.
2. Spoon the sauce over the chicken.
3. Garnish with fresh chopped parsley.
Optional Sides
